Mexican themed dishes can now be found here in the Philippines. Often times, they are served in a classy restaurant that is usually served given with a Filipino twist to cater the taste and preferences of the Filipino market. Let’s take a taco or a burrito as an example. When the two dishes are prepared the “Filipino way”, you can’t spot any difference on how it looks as compared to a true Mexican taco or burrito. But as to its taste, the “Filipino” taco is expected to have a sweeter tang than the Mexican ones.

As I had my dinner earlier, I munched a half serving (four slices) of quesadillas, paired with my sinuglaw. And just like the normal quesadillas, it was served expertly as if it was some Mexican chef prepared the food. I mean, you know, with the lettuce and the spices on the side. But when I began munching it, a smile formed on my face as I realized that I was munching a chicken-sandwich-with-loads-of-cheese-just-in-a-pita-bread. I never really expected it to be that way. But despite that, I still liked its twist and I was able to finish the whole thing.

About two days ago, my officemate and I went to the company canteen to see what we could have for breakfast. While my eyes were staring at the food served at the canteen, my officemate was already making some sign language to the canteen attendant that I couldn’t understand. I ignored it at first but I wasn’t able to help myself and became curious about their “silent” conversation.

After placing our order, I asked her about it. Then she told me that she was just trying to relay a message that she wanted to have the last sachet of the white coffee available in the canteen. From then on, I really got so curious about it. She said it tastes so good. i tried to imagine it, but I can’t seem to imagine how it tasted. As how she described it, what I imagined is that it’s a mixture of a quarter teaspoon of coffee, combined with four spoonful of cream. Quite icky, isn’t it?! But she continually convinced me that it was “oh so damn good!”.

Yesterday, I arrived earlier than my officemates. And so I decided to drop by the canteen and get myself some of the coffee she’s talking about the other day. And I guess she’s right. The coffee tastes soooo good. It’s a quite different thing from our usual coffee—especially with the brewed ones, but then its uniqueness is something worth remembering that you may want to ask for more.

I feel like the work atmosphere nowadays is totally different than it was back when my dad was in business. I own my own company and I feel like my clients expect me to be on call at any given moment which makes it really hard for me to have a life outside of work. I tried my best to balance my social life with my business but at the end of the day all it really matters is that my little company is thriving so I do what I can to make sure I’m available whenever my clients need to be. I recently got clear wireless 4g and that helped me stay in touch with them when I’m on the go but it doesn’t need that things are any easier with client e-mails and need something from me when I was out with my friends or was on a date. I really need to lay down some ground rules to make sure I don’t let things go too far but it’s hard in this economy!

The BEP member Apl de ap was newly appointed for the Ninoy and Cory Aquino Foundation’s special ambassador for education in the Phillipines. Being a pop superstar, he after donating an internet library, a new campaign starts regarding building schools for the Filipino children. The campaign titled “We can do anything” which was about for which Apl had written a song with the same title. The song aims for his message which was “With an education, we can be anything”.

Planking is one of a modern internet craze in which a “planker”, the participant, lies down on an object and then takes pictures as photographic evidence and uploads it on the internet. Planking also is a form of an isometric exercise where in the abdominal core muscles. Many forms of planking have gone over the internet, though in some countries, it became a form of expression in rallies. With this wrong image found in planking, some countries are now making measures against the fad, including building laws that are anti-planking. Though passing this law is reasonable since there are a few who had died doing planking and thus gained a growing concern regarding the fad, it has not stopped millions of people around the world from doing it.

I was browsing through youtube when my attention was caught by a thumbnail of a video clip of J.Lo’s “on the floor” single. It was a short clip, around a minute and fifteen seconds video, and its thumbnail is quite interesting because of the bunch of people involved on that video. I played the video and watched the people on that video move along with the beat of the song. It was Jasmine Meakin’s choreography of the song and it was one of the best choreography that I have ever seen. It’s cute and at the same time punk! I didn’t realize that I was already hooked with the video and I found myself clicking the repeat button for about thirty minutes.

I had a driving practice with my brother yesterday. I borrowed my aunt’s minivan for that purpose. My brother was with me. He stood up as my “driving coach” because he is a professional licensed driver. We were just driving around the village because I thought it would be much safer there. For the first few turns it went well but on the sixth turn, I got out of control and we almost bumped to a big stone! Good thing my brother was able to help me. The car wasn’t damaged, at the very least, I’m thankful it only got some few scratches. But what I am thankful for is that my brother and I were alive!

A lot of young girls nowadays experience early pregnancy. And because of that, they experience a high-risk pregnancy that would eventually lead to a risky birth. I know a friend who experienced such kind of birth. She was struggling at the hospital for her first child and I got so devastated seeing her in pain. I pity her so much that time, especially with the thought that the doctor might tell us that her condition is critical. It really scared me to death! It even came to a point that I thought of not going through pregnancy and child birth!

Balbacua is a native Filipino dish that is made of Ox’s skin. The ox’s skin is cooked first on a casserole or a pressure cooker to be tender and soft until it can be easily chewed. It is one among the many Filipinos’ favourite food, especially during the rainy days because this dish is a soup-like dish. I used to love eating it too but because of my health consciousness, I minimized eating it. It’s quite unhealthy because of the fat from the Ox’s skin. I only eat it once in a blue moon.

I used to keep on saying that I love the rice cake in the Philippines. Yes it’s still my favourite snack whenever I have the chance to eat it, but I have another cake on my “favourites” list—the sticky rice cake! It is still similar to the typical rice cake that I used to eat, it’s just that instead of using the ordinary grain rice, they used the Japanese sticky rice, and that is what made it fuller of texture that would make you enjoy chewing it! Yesterday was the first time that I ate it and I intend to eat those again!
